Alcoholic fermentation: Partial fermentation in stainless steel vats, at a controlled temperature of 14-16 ºC. Final fermentation in French oak barrels. Aging: After fermentation, the wine is kept in French oak barrels for 12 months in contact with fine lees until bottling, in order to maintain its freshness and acquire complexity.
